I woke up feeling awful on Friday – headache, sore throat – you know the drill. So pretty much I spent the whole morning in bed – all the way until I had to get up for work at 1:00.
Around 11 I managed to get up for some breakfast.
Whole wheat english muffin made into french toast (egg whites, almond milk, cinnamon, nutmeg, allspice.)

I was inspired by Caitlin’s blog idea and mixed up a topping of pumpkin, honey, and cinnamon. I made my sandwich open faced – slower to eat.

With some green tea and water.

SO good – in fact, I’m thinking of making it again this morning.
Back to bed for some reading and catching up on some hulu. Eventually I had to tear myself up (aided by Advil) and over to my parents’ house for teaching.
While I had plans for lunch, at 3:40 I had only few minutes break and I grabbed some dried pineapple to hold me over.

Advil helped a lot and I managed to finish my thankfully short teaching day.
Home for some bulked up miso soup based on Heidi’s recipe.
I just made enough for my one meal. First I used my new scale to measure out one ounce of soba noodles.

I pressed my extra firm tofu (my Le Creuset pot is perfect for pressing.)

Prepared my toppings: baby spinach, scallions, parsley (the tail end from my parents’ plant – next time cilantro), and plenty of red pepper flakes.

Super quick, really tasty, and perfect home sick food. (But also good when healthy!)

Aaaaand… back to bed.
