Rough morning Tuesday.
I got myself out of the house for a physical therapy appointment at 9. Unfortunately after my brief walk downtown on Saturday (no more than 15 minutes?) my hip has been sore. Grrr… My PT was still positive, just a minor setback. I was instructed to take a complete day off (no PT exercises or walking) and then back to work on Thursday.
At least breakfast was a huge success. Another buckwheat bake. So good.
Topped with 1T of peanut butter, 1/3 banana, and cinnamon.

Check this recipe out for sure.

After PT I fell into a bit of a rut – couldn’t seem to get started. Luckily eventually a g-chat with my friend pushed me into practicing mode. I always feel better once I get started – sometimes hard to remember.
I also managed to get myself to the pool for 30 minutes of swimming. Once again I waited too long to I get started so I didn’t have time for the 45 minutes I was hoping for, but I did push my pace for my shorter swim and only paused twice for some sips of water. Good workout.
A quick shower and off to teach. I munched on a few almonds in the car (the second half of this pack.)

A couple of cancellations during my teaching day (upcoming holidays) gave me time for a very late lunch (3:45) and a bit more practicing.
Defrosted from the freezer sweet potato lentil soup . For some reason I enjoyed it more than I did when I made it in the first place. I was hungry and a bit cold and this filled and warmed me up perfectly.

Plus, you can’t go wrong with a side of my Dad’s homemade bread (with a smidge of light butter.) I’ll have to ask about this recipe – I think it included pumpkin seeds.

Teaching began again after the break and pretty much wiped me out by the end of the day. So ready for vacation… I enjoyed visiting with my parents after (and my Dad helped me with some music arranging) but it ended up being 9:30 before I ate again which was much too late – I started feeling a bit headachy and blah.
Luckily, the day ended with one of the best sandwiches ever.
Whole wheat toast smeared with a laughing cow cheese and topped with slices of granny smith apple and smokey tempeh.

With a side of al dente green beens (seasoned with salt and pepper.)

Definitely putting this one on regular rotation.

Chatted with Dawn on the phone and then nearly managed to finish my book before I couldn’t keep my eyes open.
