My Wednesday started out a bit rough. I didn’t manage to get to bed at a reasonable hour on Tuesday (including a late night cereal snack) and waking up for an early run proved not so much fun…
Eventually I called it off (or postponed it) but not before sitting in school traffic, taking my Dad to the train station, debating with Dawn over three phone calls, talking with my Mom, and finally took an hour nap in my parent’s house.
I headed off to my therapy appointment at 10 and then dashed over to the reservoir to finally get around to my run. Three mile run in the rain. A few stretch breaks, and a slow pace, but I made it. In fact, I finished just in time and decided it was worth dashing over to a power hour of yoga.
Yoga was not my favorite instructor, but in some ways it was good to get out of my usual routine. She included so many chaturangas – my arms were very tired by the end. Plus lots of half moons and standing splits – the balance poses are not always my strong suit, but it was good to push myself.
By the time I got home I was more than ready for lunch, though my fridge was not especially full.
I whipped up a super quick batch of hummus in the food processor (chickpeas, tahini, lemon juice, cumin, salt) and served a big blob with cucumber (straight from Dawn’s Vermont garden!) and a sprinkle of sea salt.

Also, a toasted ezekiel english muffin topped with some italian herb spread and a fried egg. I finally managed to leave the yolk runny as planned…)

Pretty good for a mostly empty fridge.
I managed a pretty productive afternoon – practicing and finalizing my teaching schedule.
I had company coming for dinner so I took a quick trip to the grocery store and got the final ingredients to make shrimp and goat cheese quesadillas.
Sauteed onions and red peppers

Shrimp with chili powder and cayenne pepper

Shredded pepper jack cheese (with goat cheese of course!)

(I skipped photos at dinner, but this was a photo from the last time I made them.)
Yum!
