Despite waking up at 5:30 on Thursday, I managed to stay in bed and eventually fall back asleep. It ended up being a late (but well rested) start to my day.
I was very hungry when I woke up (probably to do with the lack of dinner Wednesday night) but I refrained from eating right away and instead headed over to yoga.
I’ve been volunteering at the studio in exchange for free classes – a good deal! This class was a power hour with my favorite teacher Heather. My hip and mind thanked me.
When I got back home I knew exactly what was for lunch: shrimp and goat cheese quesadillas (intended for dinner on Wednesday.)
Once again Jenna has come up with a delicious recipe. Instead of using the frozen Trader Joe’s mix she suggested (I don’t like the texture of frozen peppers) I sauteed my own: onions (cooked alone first until caramelized) and thinly sliced red pepper.

I very quickly cooked up the shrimp and coated with cayanne pepper, chili powder, and salt.

Piled onto a flour tortilla with pepperjack cheese and goat cheese.

The tortillas were crispy and the insides melty. Perfect.

Topped with avocado and salsa.

These were definitely worth making again. And picturesque to boot.
Yum.
The afternoon flew by (that’s what happens when you get up late) and I grabbed a bowl of raspberries before I headed off to teach for the evening.
Teaching was good – the last of my students for the summer – and then I visited for a while with my parents before heading home.
I’m going out of town for the weekend so I couldn’t just let the rest of the shrimp go to waste…
This time I made a bowl with the remaining ingredients (plus a bunch of cilantro.)

Yup. Still good.
So I’m off to New Hampshire with a big group of friends for the weekend. My first experience in a very long time sleeping in a tent (and I believe only my second time ever?!) But it won’t be all that rustic – mostly just a giant party for a few days. Definitely no computer so I’ll report back next week. Enjoy the weekend!
